Sun Valley Resort, Simikot
Simikot is a popular trekking destination, offering lots of green open spaces and hotels that cater to the ecologically-minded. Hotels here tend to be smaller and without all amenities offered in the cities, but they make up for it with gorgeous views and clean air. Sun Valley Resort is a good example. Located near Lake Mansarovar--at an elevation of 9,500 feet--it's a perfect stop for those needing to acclimatize before trekking to higher altitudes. The hotel has a total of 13 rooms, including 10 standard, 2 deluxe and one suite. Do keep in mind that the hotel is away from the city and popular tourist destinations, and it's recommended only if you want a place away from the bustle of town. Do keep in mind that the hotel should be booked through a trekking tour company, as there is no public transportation to the area.

Everest Panorama Resort, Daman
A resort destination town, Daman has a series of well-known and much loved sites, including the Main square in Bungamati, the village of Thecho Kathmandu Valley and the Hillside Buddha Temple. The Everest Panorama Resort is perched on a cliff, facing Mount Everest directly. The hotel itself is somewhat outdated and lacking on amenities, although you can rent an old bike at the welcome counter and take on the roads outside. There's no central heating in the hotel. In winter, you'll be provided with a small electric heater and a hot water bottle to get through the night. Even so, it gets seriously chilly inside. You should be prepared to sleep well-dressed. There are no nearby attractions or shops, but the hotel has a small restaurant and a sauna to keep you warm.
