Aureole
Chef Charlie Palmer, one of America's most celebrated restaurateurs, opened Las Vegas' Aureole as a sister restaurant to his New York City eatery of the same name. While the dinner menu at Aureole is spectacular in its own right, what makes this restaurant truly cool is the experience of ordering and drinking wine. Diners use electronic hand-held e-Winebooks to choose from among 40,000 bottles, and "Wine Angels" retrieve bottles from a 42-foot wine tower while dangling from suspended harnesses. Aureole is located inside the Mandalay Bay Hotel and Casino, which is just over a half-mile from the Bali Hai Golf Course, an 18-hole, par 71 course that first opened in 2000.

SEABLUE
Even if you don't have time for dinner, the decor at SEABLUE is cool enough to make it worth stopping in for a cocktail. Alluring design elements include a huge fish tank filled with bright tropical fish, stone walls with water continuously cascading over them and tinted light fixtures that drench the dining room in cool, blue light. Diners at this seafood restaurant owned by leading Las Vegas restaurateur Michael Mina can even watch their dishes being prepared in the open air, wood-fired kitchen. Red Square
Red Square is a renowned Soviet-themed bar and fine dining restaurant that creates a bold and astonishing environment. A decapitated statue of Vladimir Lenin greets guests at the door, and the dining room is filled with propaganda posters and bright crimson decor. Though the gourmet menu alone is worth stopping for, this spot is known for its selection of premium imported vodkas and its walk-in vodka freezer, in which guests can sample the spirits while dressed in borrowed mink coats and hats. Located inside Mandalay Bay Hotel and Casino, Red Square is just a mile and a half from the Callaway Golf Center, a 9-hole, par 27 course that has been in operation since 1997.
