Tomo 1 is a restaurant that puts a gourmet twist on classic Buenos Aires cuisine in a style that executive chefs and sisters, Ada and Ebe Concaro, label "Porteña Gourmet." El Bistró
El Bistró, located in the Faena Hotel, is a restaurant that experiments with molecular preparation techniques, in which ingredients are broken down and/or manipulated through complicated chemical processes in order to create rare combinations of texture and flavor. In this restaurant, you will encounter such bold preparations as tortilla and mint foams, garnishing carefully manipulated meat and fish dishes. Desserts include chocolate and citrus foams, sorbets and cakes, served with extravagant presentation. Due to the variety and complexity of El Bistró's innovations, it is one of the most expensive restaurants in the city.

Casa SaltShaker
Casa Saltshaker is owned by executive chef, Dan Perlman and Host, Henry Tapia, and is operated out of their own apartment. It is referred to as a "puertas cerradas," or closed-doors location; in other words, it is a private dining space--no sign outside, no walk-ins, and no public advertising. The idea is to create an intimate and relaxed setting that consists of small, diverse parties of ex-pats and locals alike. While the setting is mostly casual, the food--which is prepared exclusively by Perlman--is innovative and upscale, with menus that change for every occasion and tend to reflect nearby holidays or important cultural dates. The menu consists of a five-course tasting, accompanied by a wine tasting menu for an additional fee.
