Solera
Solera is a gourmet dinner restaurant with an attached wine bar, at which you may order any item from the restaurant menu. The restaurant is open seven days a week, serving from 4 until 10 p.m. The wine list features 42 wines by the glass (as of 2009), with another hundred or so available by the bottle. The wines are from around the world, with an emphasis on New World Californian wines. Although some French, Spanish and Italian wines are featured, the bulk of the wines outside of the United States come from regions such as Australia, Chile and South Africa. The wine list always features at least a handful of Colorado wines as well, giving patrons the opportunity to sample a bit of the local flavor.

Caveau Wine Bar
Caveau is an upscale wine bar, opened in December of 2008, with more than 55 wines available by the glass. The bar is open seven days a week in the evenings only, and features a happy hour from 4 to 7 p.m. every day, with discounted glasses and flights. Wines come from around the globe, and although there is a slight bias in favor of American wines, some small-scale, high-end wineries from France, Italy and Spain are featured as well. The emphasis here is on experiencing new wines, and wine flights are designed to expand horizons both in terms of varietal depth and regional diversity. The menu is fairly simple, with basic breads, cheeses and olives, supplemented by some pastas, pizzas and paninis.

The Paris Café and Wine Bar
The Paris Café and Wine Bar is a casual restaurant open seven days a week for both lunch and dinner, specializing in sandwiches, pizzas and salads, with an attached wine bar. Twenty wines are available by the glass, with an additional 20 available by the bottle (as of 2009). Despite the name, there are generally very few French wines represented, with New World regions like California, Washington, South Africa, New Zealand and Australia dominating the list. Although the list is far from extensive, the selections are strong and the casual atmosphere of the Paris Wine Bar makes it ideal for visiting immediately after a round of golf.
