The variety of vegetarian cuisine available in this Colorado city is inspiring, with organic, vegan and local options making headway in the culinary scene. Whether you're looking for an Indian meal, a light salad or a hearty brunch, Denver has a vegetarian restaurant to fit the bill.

WaterCourse Foods

Serving a vegetarian menu that appeals to vegans as well, WaterCourse Foods offers breakfast and light meals. Breakfast options include scrambles made with cage-free eggs or tofu; the Toulouse, with broccoli, portobello mushrooms, Swiss cheese and artichoke hearts, is a great way to start off the morning. Baked brie or onion rings are classic starters for the sandwiches, wraps and salads on the menu, but the real stars are the entreés. Succulent pastas like the Andalusian, fettuccine in a brown butter sauce together with butternut squash, green olives, fresh herbs, parmesan cheese and cannellini beans, are tempting, but if you aren't a pasta lover, try the tempeh scallopini, made from marinated, breaded and fried tempeh served in a mushroom gravy with mashed potatoes and chard for a vegetarian take on comfort food.
